I don’t know where I came up with this particular concoction as a marinade for pork, but it was something I threw together one night when I was craving something that was savory and sweet. As a general rule, I hate mustard. I won’t allow it to touch my sandwiches (I don’t eat ketchup or mayo either, FYI), but the combination of the mustard with the marmalade (with a bit of honey thrown in for more sweet) worked out to a lovely mellow flavor when grilled on pork. This is great with roasted potatoes.
Ingredients:
- 3 tbsp orange marmalade
- 1 tbsp honey
- 2 cloves garlic, minced
- 2 tbsp dijon mustard
- 4 pork chops
Directions:
- Mix marmalade, honey, garlic, and dijon mustard and pour into a ziplock bag.
- Marinate the pork chops for at least 30 minutes.
- Before tossing on the grill (low and slow), sprinkle with kosher salt and fresh ground pepper to taste.
- Grill until no longer pink in the middle. I know, I know, not much in the way of instructions, but it depends on your grill and how thick your chops are. If you cook on charcoal, I can’t help you. I’m a gas grill girl all the way.
