Orange Dijon Pork Chops

I don’t know where I came up with this particular concoction as a marinade for pork, but it was something I threw together one night when I was craving something that was savory and sweet.  As a general rule, I hate mustard.  I won’t allow it to touch my sandwiches (I don’t eat ketchup or mayo either, FYI), but the combination of the mustard with the marmalade (with a bit of honey thrown in for more sweet) worked out to a lovely mellow flavor when grilled on pork.  This is great with roasted potatoes.

Ingredients:

  • 3 tbsp orange marmalade
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 2 tbsp dijon mustard
  • 4 pork chops

Directions:

  1. Mix marmalade, honey, garlic, and dijon mustard and pour into a ziplock bag.
  2. Marinate the pork chops for at least 30 minutes.
  3. Before tossing on the grill (low and slow), sprinkle with kosher salt and fresh ground pepper to taste.
  4. Grill until no longer pink in the middle.  I know, I know, not much in the way of instructions, but it depends on your grill and how thick your chops are.  If you cook on charcoal, I can’t help you.  I’m a gas grill girl all the way.
