After the prior success of the Man Approved Chicken Burritos, I knew I had to try it with beef. So for this week’s Thoughtless Thursday post I went with that. After last week’s debacle with the black beans and rice, it was nice to have a success. I loved the addition of the black beans to this burrito filling, and the hubby loved the beef. I think I actually prefer the chicken, but still this was really very good.
Ingredients:
- 2 pounds of beef (I used sirloin steaks because that’s what was on special, but any kind of roast would be great)
- 1 jar of your favorite salsa (I like the On The Border Medium heat salsa)
- 1/4 cup or 1 packet of taco seasoning (I like the Old El Paso regular seasoning)
- 2 cups of black beans, drained
Directions:
This doesn’t even require actual steps, it’s so easy. Throw everything in the crock pot and let er cook. 8 hours on low or 4 hours on high. Then use a wooden spoon to break everything up. Spoon it into your tortilla with cheese and sour cream and whatever you wish. And if you’re like me, toss it on the George Foreman to make it a grilled stuffed burrito.
