In this month’s Cooking Light magazine, there was a whole string of pork recipes. There was one for a pork tenderloin that sounded divine. All I had around were some butterfly pork chops, so I adapted it for that. And it was DELICIOUS.
Ingredients:
- 2 butterfly cut pork chops
- 1 tablespoon parsley
- 1 tablespoon cilantro
- 1/2 tsp cumin
- 1/4 tsp crushed red pepper
- 1/2 tsp kosher salt
- 1/2 tsp fresh black pepper
- 1 tsp oregano
- 1 tbsp lemon juice
- 2 tsp minced garlic
- 2 tbsp olive oil
Directions:
- Mix all the ingredients up in a plastic bag and squish around until the pork is well coated.
- Allow it to marinate for 1-2 hours.
- Preheat your grill to 350 degrees.
- Grill each chop approximately 10 minutes a side until you have some nice grill marks.
