  1. Happy New Year all from Australia, if you’re busy i’ll post one for you that freezes and substitutions are limitless. it’s 34 celcius here but hubby wanted casserole. 3lb cubed rump, 1 cup of red wine, carrots, onion, celery, stock and water. 1 table spoon evoo, Rosemary, thyme, seasoning mix (spicy, italian etc to taste) tomato paste, flour and 3 diced rashers bacon. Stir all non liquids on smoking hot 5-10 mins then add liquids, put on lid and cook very slow for 1 hour. Mushrooms, cooked diced pumpkin potatoes etc can be added near end or serve on bread, beans, pasta, rice etc. Cook till tender if using stewing beef. Good luck with your class. And I cant wait to read your new novella later this week. Xx
